CRAB CAKES 
1 lb. fresh crab meat (lump is best)
1 1/2 tsp. mayonnaise
1 1/2 tsp. prepared mustard
2 level tbsp. plain bread crumbs
1 finely chopped green pepper
1 beaten egg
Salt & red cayenne pepper to taste

Mix ingredients together and form into cakes early in the day. Keep in refrigerator uncovered on paper towels to dry out. Deep fry in vegetable oil until brown.
