CRACKLING MUFFINS 
1/2 c. boiling water
1/2 c. milk
1/2 c. corn meal
1/2 c. flour
1/2 tsp. salt
2 tbsp. sugar
2 tsp. baking powder
1 egg
2 tbsp. cooking oil
1/2 c. cracklings (add water to cup to soften, just cover cracklings with water for 2 to 3 hours)

Sift dry ingredients together, add water, milk, egg, cooking oil and cracklings. The mixture will be quite thin. Spoon into heated, oiled muffin tins. Cook at 400 degrees for 20 minutes. Makes 10 to 12 muffins.
