TORTILLA SOUP | |
1/2 c. chopped onion 2 cloves garlic, minced 1/4 c. vegetable oil 1 (14 1/2 oz.) can stewed tomatoes 1 (10 oz.) can Ro-Tel tomatoes & green chilies, diced 1 (10 1/2 oz.) can beef bouillon soup 1 (10 1/4 oz.) can chicken broth soup, undiluted 1 (10 1/4 oz.) can tomato soup, undiluted 1 (16 oz.) can whole kernel corn 1 1/2 c. water 1 tsp. ground cumin 1 tsp. chili powder 1 tbsp. parsley flakes (opt.) 6-8 corn tortillas, cut into 1/2" strips 1/2-3/4 lb. ground beef, browned (opt.) Saute onion and garlic in oil in large Dutch oven until tender. Ad next 10 ingredients. Bring to a boil; cover, reduce heat and simmer 1 hour. Add tortilla strips and simmer 5 minutes. If adding meat, add browned, salt and peppered ground beef with other 10 ingredients. 6 to 8 cups. |
