SWEET AND SOUR SPARERIBS
(MICROWAVE)
 
2 1/2 lbs. spareribs, back or loin

SAUCE AND MARINADE:

4 tbsp. soy sauce
1 tbsp. teriyaki sauce
1 can pineapple chunks
2-3 cloves garlic, minced
Dash of black pepper
Dash of ginger
1/2 lb. fresh pea pods or 1 (6 oz.) pkg. frozen pea pods
Water
Dash of salt

Cut the ribs into 3-4 even pieces. Place in a microwave dish. Sprinkle with pepper and ginger. Combine sauce/marinade. Pour 3/4 cup of sauce over ribs. Microwave at high power for 5 minutes until they have lost their pinkness. Sprinkle with some chopped green onion and add some of the pineapple chunks. Microwave at high for another 10 to 12 minutes, turning ribs over after 6 minutes of baking and brushing them with the sauce in the dish.

Remove juices from pan into a small shallow skillet. Boil down until reduced to about 1/2 cup. Pour juices back into the pan over ribs. Add pea pods. Cover and microwave at high for another 3 minutes until pea pods are tender crisp. Add the rest of pineapple chunks. Microwave at high for 1 minute.

REMEMBER: You don't need that much sauce when microwaving. You may reserve part of the pineapple juice for a fruit salad or for other use.

Since microwave ovens vary in power, you may need to adjust your cooking time.
