BASIC OMELET | |
8" pan 3 eggs 1 1/2 tbsp. water or milk (optional) 1/4 tsp. salt Dash pepper 1 tbsp. butter Beat together eggs, water or milk (optional) and seasonings until frothy. In omelet pan over medium heat melt butter, tilting pan to coat side. When butter begins to brown, add egg mixture to pan. Being careful not to scrape bottom of pan, stir eggs gently sliding bits of set egg to side. Allow eggs to set. As eggs set lift edges occasionally, tilting pan so that liquid egg in center runs under set position. Cook until bottom of omelet is golden brown and eggs are set to desired degree of doneness. Fold in half and turn out onto plate. Makes 2 servings. |
