BLACK-EYED PEAS 
3 qts. black-eyed peas with snaps
Water to cover
1/2 tsp. salt or more to taste
5-6 slices bacon

In a Dutch oven, cover peas with water, adding salt and the bacon. Bring to a boil and lower temperature to medium and cook for about 1 hour or until done. Serve with fresh tomatoes, fresh onions and your favorite cornbread.
