WEST INDIAN STEWED CODFISH 
3 lbs. of dried codfish (boneless)
2 onions
3 stalks of scallion
3 cloves of fresh garlic
1 red pepper
3 fresh tomatoes
1 yellow pepper
2 green peppers
1 1/2 tbsp. black pepper
1/2 tsp. coriander
1/2 can whole tomatoes (Red Pack)
1 can tomato paste
1 can tomato puree (Red pack)
1 1/2 tbsp. olive oil

Soak fish overnight, rinse, boil for 15 to 20 minutes. Pour water off, when cool, shred fish, remove all excess skin, chop all ingredients, onions, scallions, peppers, tomatoes and fresh garlic. In a deep skillet medium low flame saute onions, peppers, tomatoes and fresh garlic. Stir. Now, add fish, add 1/2 can whole tomatoes, 1 can crushed or tomato puree, 1 can tomato paste. Add pepper and coriander. Cover. Cook on a low flame. Stir now and then. Cook for 1 1/2 to 2 hours. Serve with rice.
