POTATO NOODLES 
4 med. potatoes
1/2 c. shortening
1/2 c. farina
Flour
2 eggs

Boil and mash potatoes and let cool. Add eggs. Mix well. Add enough flour to form firm dough. Separate and roll in strips. Cut in 1 inch pieces and roll individually. Boil 6 quarts water. Add salt. Add noodles and cook about 10 minutes. Drain and set aside.

Melt shortening. Add farina lightly brown over low heat. Add 1/2 cup water slowly. Mixture will be brown and fluffy. Add noodles and serve warm. Makes a great meal served with lettuce salad.
