QUICK SESAME - GINGER CHICKEN | |
1 1/2 tbsp. sesame seeds, toasted 1 tbsp. grated fresh gingerroot 3 tbsp. honey 3 tbsp. low-sodium soy sauce 6 (4 oz.) skinned, boned chicken breast halves Vegetable cooking spray Combine first 4 ingredients; set aside. Place chicken between 2 sheets of heavy-duty plastic wrap, and flatten to 1/4 inch thickness, using a meat mallet or rolling pin. Brush half of soy sauce mixture over chicken, coating both sides. Coat grill rack with cooking spray; place on grill over medium-hot coals. Place chicken on rack, and cook 8 to 10 minutes or until chicken is tender, turning and basting frequently with remaining soy sauce mixture. Makes 6 servings. |
