SWEET POTATO PIE 
1 crust pastry for 9 inch pie
2 eggs
2 c. mashed, cooked sweet potato or mashed pumpkin
3/4 c. sugar
1/2 tsp. salt
1/2 tsp. each cinnamon, ginger, nutmeg, and ground cloves
1 2/3 c. evaporated milk or half & half

Heat oven to 425 degrees. Prepare crust. Beat eggs, then beat in remaining ingredients. Pour into pastry-lined pie plate. Bake 15 minutes. Reduce oven temperature to 350 degrees. Bake pie until knife inserted in center comes out clean, about 45 minutes longer. Cool and serve with sweetened whipped cream.
