QUICK BUTTERMILK ROLLS 
2 pkgs. yeast
1/4 c. lukewarm water
3 tbsp. sugar
4 1/2 c. flour
1 tsp. salt
1/2 tsp. baking soda
1 1/2 c. buttermilk
1/2 c. vegetable oil
3 tbsp. butter, melted

Place yeast, water and 1 tablespoon sugar in a large bowl and set aside. Sift flour, salt and soda. Heat buttermilk on low till lukewarm; combine with yeast mixture. Add remaining sugar and oil; mix well. Add flour mixture, 2 cups at a time; blend. Let stand for 10 minutes. Knead for 5 minutes. Form into rolls; place on greased 9 x 13 inch pans. Brush tops with melted butter. Let rise 30 minutes. Bake at 400 degrees for 8 to 10 minutes. Makes 18 to 24 rolls.
