1 c. sour cream
1/3 c. chopped green onion
1 1/2 c. cheddar cheese, grated
1 can cream of chicken soup OR cream or celery soup
1 can milk, almost full

Salt & pepper to taste

Grate potatoes after they cool. Place in greased 9 x 13 casserole. Melt butter, add the soup, milk, onion and cheese. When the cheese is melted add to the potatoes and mix well. Fold in the sour cream.

Top with buttered bread crumbs: 2 tablespoons butter and 1/4 cup Contadina bread crumbs.

Bake at 350 degrees for 45 minutes.

This family recipe has been around for years. No reunion or birthday is complete without potato casserole. It is easy to make the day before and keep refrigerated until it goes into the oven. Also, taste better the next day, if there are any leftovers!
