ANN'S "WONDERFUL" SWEET POTATO
SOUFFLE
 
1 lb. 3 oz. can sweet potatoes, drained
1 1/4 c. sugar
2 eggs
3/4 stick soft butter
1 c. milk
1/4 tsp. nutmeg
1/2 tsp. cinnamon

Combine all ingredients with mixer. Pour into Pam-sprayed baking dish. Bake at 300 degrees for 45 minutes or until firm. Add topping during last 15 minutes of baking.

TOPPING:

3/4 stick butter
1/2 c. brown sugar
1/2 c. chopped nuts
3/4 c. crushed cornflakes

Melt butter and brown sugar. Add nuts and cornflakes. Spread over top of souffle and bake 15 minutes or until crunchy.
