GWEN'S WONDERFUL LASAGNA | |
1/2 lb. Italian sausage (I use bulk) 1/2 lb. ground beef 1 1/2 tbsp. minced garlic 1 tsp. basil 1 (15 oz.) can tomato sauce 1 (12 oz.) can tomato paste 1 (8 oz.) pkg. lasagna noodles 2 eggs, beaten 2 (12 oz. ea.) tubs cottage cheese 1/2 cup grated Parmesan cheese 2 tbsp. parsley 1 tsp. salt, divided 1/2 tsp. pepper 1 (16 oz.) pkg. Mozzarella cheese slices Brown both the ground beef and sausage, draining any excess fat. Add garlic, basil, 1/2 teaspoon salt, tomato sauce, and tomato paste. Mix well. Simmer for 30 minutes stirring occasionally. Prepare noodles according to package directions. Preheat oven to 350°F. Grease a 9x13x2-inch pan. Set aside. In a bowl, combine eggs, cottage cheese, Parmesan cheese, parsley, salt and pepper. Mix well. Layer in prepared pan as follows: 3 strips lasagna noodles, 1/3rd meat mixture, then 1/3rd of the cheese mixture, and Mozzarella cheese slices on top. Repeat for two more layers using all 9 noodles ending with more Mozzarella cheese slices on top. Bake at 350°F for 30 minutes or until slightly browned. Submitted by: GT |
