APPLESAUCE BRAN MUFFINS | |
1 1/4 c. unsifted whole wheat flour 3/4 c. bran 3/4 c. sugar 1 tsp. salt 1 tsp. baking soda 1 tsp. cinnamon 1/2 tsp. nutmeg 1/2 c. chopped nuts (optional) 1 c. applesauce 1/2 c. vegetable oil 1 tsp. vanilla 2 eggs 1 tbsp. sugar 1/2 tsp. cinnamon Preheat oven to 400 degrees. Line muffin tins with paper liners or spray bottom of cups with non-stick spray. Combine flour, bran, sugar, slat, soda, cinnamon, nutmeg, nuts, applesauce, oil, vanilla and eggs. Blend at low speed for one minute, beat at medium speed for 2 minutes. Fill muffin cups 2/3 full. Mix together the 1 tablespoon sugar and 1/2 teaspoon cinnamon. Sprinkle 1/4 teaspoon of mixture over top of batter in cups. Bake 15 to 20 minutes. Makes 16 muffins. |
