APPLESAUCE BRAN MUFFINS 
1 1/4 c. unsifted whole wheat flour
3/4 c. bran
3/4 c. sugar
1 tsp. salt
1 tsp. baking soda
1 tsp. cinnamon
1/2 tsp. nutmeg
1/2 c. chopped nuts (optional)
1 c. applesauce
1/2 c. vegetable oil
1 tsp. vanilla
2 eggs
1 tbsp. sugar
1/2 tsp. cinnamon

Preheat oven to 400 degrees. Line muffin tins with paper liners or spray bottom of cups with non-stick spray. Combine flour, bran, sugar, slat, soda, cinnamon, nutmeg, nuts, applesauce, oil, vanilla and eggs. Blend at low speed for one minute, beat at medium speed for 2 minutes. Fill muffin cups 2/3 full.

Mix together the 1 tablespoon sugar and 1/2 teaspoon cinnamon. Sprinkle 1/4 teaspoon of mixture over top of batter in cups. Bake 15 to 20 minutes.

Makes 16 muffins.

I add a couple chopped apples or blueberries or whatever you like. It adds extra moisture so they aren't too dry. Also can sub wheat germ and or ground flax for any or all of bran. Add some extra water or apple juice if too dry.
