ZUCCHINI SQUASH BREAD 
3 eggs
2/3 c. oil
1 1/2 c. sugar
3 tsp. vanilla
1 1/4 c. zucchini, grated or coarsely ground
3 c. flour
1/4 tsp. baking powder
1 tsp. salt
1 tsp. baking soda
3 tsp. cinnamon

Beat eggs until light and fluffy. Add sugar, vanilla and oil, and blend well. Stir in zucchini. Sift dry ingredients together and add to mixture. Blend well. Pour into 2 greased and floured 9 x 5-inch bread pans. Bake at 350 degrees for 1 hour.
