LIME PIE 
1 baked pie shell
4 egg yolks
1/2 c. sugar
4 tbsp. lime juice
1/2 tbsp. Knox unflavored gelatin
1/3 c. cold water
4 egg whites
1/2 c. sugar

Beat egg yolks with sugar and juice in top of double boiler. Cook over hot water until thickened. Soften gelatin in cold water and add to mixture; cool.

Beat egg whites until stiff and add sugar gradually, beating constantly. Fold custard into egg whites. Pour into baked pie shell and refrigerate until ready to use. May garnish with whipped cream and thin slices of lime.

This pie is for those who do not like the sweetness of condensed milk lime pie. It has a tart flavor.
