LIGHT POTATO SALAD 
3/4 lb. potatoes
1/2 c. reduced calorie salad dressing
1/2 c. chopped green pepper
1/2 c. celery
1/8 tsp. pepper
Salt to taste
1/2 c. sweet relish
1/2 c. onion
1 tbsp. mustard
1 (2 oz.) jar pimentos, drained

Boil potatoes until tender (or microwave). Drain and cool. Combine remaining ingredients. Stir well and pour over potatoes. Toss gently. Chill.

Since microwave ovens vary in power, you may need to adjust your cooking time.
