ARTICHOKE PIZZAS 
12 lg. fresh artichoke hearts, cooked & coarsely chopped
1/4 c. + 1 tbsp. lemon juice
2 tbsp. olive oil
8 lg. fresh artichoke hearts, rubbed with lemon halves
1/4 c. minced mint leaves
1/2 tsp. salt
1 tsp. freshly ground pepper
Basic pizza dough
1/4 c. grated Parmesan

1. Put the cooked artichoke hearts in the bowl of a food processor. Add 2 tablespoons of the lemon juice, 1 tablespoon of the olive oil and puree until smooth. Set aside.

2. Meanwhile, cut the raw artichoke hearts into very thin match sticks and put them in a glass or ceramic bowl. Add the remaining lemon juice and olive oil, mint, salt and pepper and toss to combine.

3. Follow steps 4 and 5 in the recipe for basic pizza dough. For the topping, spread a layer of artichoke puree over the dough and lightly dust with the Parmesan cheese. After baking, top the pizzas with the artichoke salad.

Yield: 8 individual pizzas.
