CARROT COFFEE CAKE 
2 eggs
1 c. sugar
3/4 c. oil
1 1/2 c. flour
1 tsp. baking powder
3/4 tsp. baking soda
1/8 tsp. salt
1 tsp. cinnamon
1 c. finely shredded raw carrots

Beat eggs and sugar gradually and continue beating until thoroughly combined. Stir in all other ingredients until well blended. Pour into greased and floured 6 cup mold. Bake at 350 degrees for 25 minutes.
