BLACK BEAN SOUP | |
1 cup cooked black beans 1 (10 oz.) can cream of mushroom or chicken soup 2 cloves garlic, minced 1/4 cup apple cider vinegar 1 cup chopped cilantro 1 tbsp. Stevia or sugar 1 tbsp. Italian seasoning (McCormick) 1 tsp. Montreal seasoning (McCormick) 1 tsp. freshly ground pepper 4 tbsp. (1/2 stick) butter 2 tbsp. olive oil GARNISH: 1 cup raw broken cashews chopped cilantro dairy sour cream Place butter and oil on medium heat in a large pot. Add garlic, Italian seasoning and Montreal salt and sauté for 1 minute. Add beans, vinegar, cilantro, pepper, can of soup and Stevia. Simmer for 15 minutes. Taste and adjust seasonings. When ready to serve, sprinkle with cashews. Garnish with chopped cilantro and top with dairy sour cream, if desired. Serves 4 to 6. Submitted by: Daya |
