POTATO PUDDING 
6 med. potatoes, grated
1/2 - 1 c. chopped onions
5 oz. evaporated milk
5 eggs
1/2 lb. bacon
Salt & pepper to taste

Chop bacon into small pieces and fry. Grate the potatoes and put in cold water until ready to use. Chop onions. Drain bacon and potatoes. Mix all ingredients and put in 9"x13" baking dish. Bake at 450 degrees for 20 minutes, then turn down to 350 degrees for 1/2 hour. For variation add pepper and/or grated cheese over top when done baking.
