ALMOND MANDARIN SALAD 
I:

1/2 c. sliced almonds
3 tbsp. sugar

II:

1/2 head iceberg lettuce
1/2 head romaine lettuce
1 c. chopped celery
2 whole green onions, chopped

III:

1/2 tsp. salt
Dash pepper
1/4 c. vegetable oil
1 tbsp. chopped parsley
2 tbsp. sugar
2 tbsp. rice vinegar
Dash Tabasco

IV:

1 (11 oz.) can mandarin oranges

In heavy skillet, over medium heat, cook almonds and sugar, stirring constantly until almonds are coated and sugar dissolved. Watch carefully as they burn easily. Cool and store in airtight container.

Tear up lettuce, mix with celery, onion. Refrigerate.

Mix ingredients from III; set aside.

Just before serving add dressing to lettuce. Toss then add mandarins and almonds.
