SHRIMP QUICHE 
1 (9 inch) unbaked pie shell, pricked sides & bottom
2 cans shrimp (4 1/2 oz.) or use salad shrimp, fresh (can of tuna can be substituted - 6 1/2 oz.)
1 1/2 c. Swiss cheese, grated
1/2 c. onion, finely chopped
2 eggs, beaten
1 c. evaporated milk
1 tbsp. lemon juice
3/4 tsp. garlic salt
1/8 tsp. pepper

Preheat oven to 450 degrees. Distribute shrimp (drained) over the bottom of pastry shell. Sprinkle cheese and onion over shrimp. Beat together eggs, milk, lemon juice and seasoning. Pour over shrimp mixture. Bake on cookie sheet 15 minutes. Reduce oven to 350 degrees and bake an additional 15 minutes or until top is golden. Dress with cocktail sauce. Serves 6.
