WHEAT GARDEN SALAD (TABBOULEH) 
1 c. cracked wheat, fine - bulgur
1 bunch green onions
2 lg. bunches parsley
1/2 bunch mint leaves
4 lb. tomatoes
Juice of 4 lemons
1/2 c. olive or corn oil
Salt and pepper to taste

Soak wheat in water a few minutes. Squeeze dry by pressing between palms. Chop onions, mint leaves, parsley, and tomatoes very fine. Add wheat, lemon juice, olive oil, salt and pepper to chopped items. Mix well.

Serve with fresh lettuce leaves, grape leaves or cabbage leaves used as scoops. Serves 6.
