RHUBARB PIE 
3 c. rhubarb, cut fine
1 1/2 c. sugar
1 egg
1/4 c. flour
1/2 tsp. cinnamon
1 tbsp. butter
Pastry for 9" (2 crust) pie

Place rhubarb in a large bowl; add sugar, egg, flour and cinnamon. Mix well. Spoon into pastry lined pie pan. Dot with butter. Place on top of crust and crimp edges. Brush with milk and sprinkle with sugar. Bake in a 350 degree oven for 45-50 minutes or until rhubarb is done and crust is brown.
