1 (10 oz.) pkg. frozen mixed vegetables
1/4 c. butter
1 med. onion, chopped
2 c. soft bread crumbs
1/4 c. chopped parsley
1 1/4 tsp. salt
1/4 tsp. thyme
3/4 tsp. hot sauce
1 egg, slightly beaten
1/2 c. milk
1/2 tsp. basil
1 1/2 lb. ground beef
1 c. grated cheddar cheese

Cook the mixed vegetables in boiling water, salted water for 5 minutes and drain. Melt butter in a skillet. Add the onion and cook until tender but not brown. Add bread crumbs, parsley, 1/4 teaspoon salt, thyme, and 1/4 teaspoon hot sauce.

Combine the egg, milk, remaining salt, basil and remaining hot sauce in a mixing bowl. Add 1 cup bread crumb mixture and mix well. Add the ground chuck and mix well.

Press 3/4 of the beef mixture over bottom and 3/4 up the side of a 9x5x3 inch loaf pan, leaving center hollow. Combine remaining bread crumb mixture with mixed vegetables and cheese and turn into beef mixture in loaf pan. Cover with remaining beef mixture.

Bake in 350 degree oven for 1 hour. Let stand for 10 minutes before turning out onto serving platter and serve with cheese sauce, if desired.
