LIME AMBROSIA SALAD 
2 pkg. (3 oz.) lime Jello (orange good too)
2 c. boiling water
2 c. (two 8 1/4 oz. cans) crushed pineapple in syrup
1/2 c. cold water
2/3 c. undiluted evaporated milk
1/2 c. mini marshmallows
1/2 c. flaked coconut

Dissolve gelatin in boiling water. Stir in pineapple with syrup and cold water. Chill until mixture mounds from a spoon. Stir in evaporated milk, marshmallows and coconut. Pour into 6 cup mold (if you wish or bowl). Chill until firm. Unmold onto lettuce leaves.
