COFFEE CAKE 
3 eggs
1 cup sugar
1/4 cup non-hydrogenated vegetable shortening
1/4 cup butter, almost room temperature
3/4 cup molasses
1 teaspoon vanilla
1/2 teaspoon baking soda
1 1/2 teaspoons baking powder
1/2 teaspoon salt
1 teaspoon nutmeg
1 teaspoon cinnamon
1 teaspoon ginger
1/2 teaspoon cloves
2 cups all purpose flour
1 cup brewed (cold) coffee

Preheat oven to 350°F.

Beat eggs with sugar, butter and shortening until light and creamy. Add molasses and beat for 1 minute. Add remaining ingredients and beat just until combined.

Pour into a greased 9x13-inch cake pan.

Bake in preheated oven until a wooden pick inserted in cake comes out clean (about 30 minutes). Cool on wire rack.
