SAUSAGE PANCAKES WITH APPLE SYRUP | |
1/2 pound pork sausage 1 1/2 cups all-purpose flour 2 teaspoons baking powder 1/2 teaspoon salt 1 tablespoon sugar 1 egg, beaten 1 1/4 cups milk 2 tablespoons sausage drippings Brown sausage well and drain on absorbent paper. Sift dry ingredients together. Add sausage and mix lightly. Mix egg, milk and drippings. Stir into flour mixture, mixing only enough to moisten the flour. Bake on a hot griddle or skillet. Serve with Apple Syrup (see below), if desired. Makes 10 to 12 pancakes. APPLE SYRUP: 1 cup diced apples 1/4 cup maple flavored syrup 1/2 cup water 1/4 teaspoon cinnamon 1 tablespoon fresh lemon juice Combine ingredients in a small saucepan. Heat until boiling, then reduce heat and simmer until apples are transparent, about 10 minutes. Serve over sausage pancakes, waffles, or French toast. Makes about 1 cup syrup. |
