STUFFED ZUCCHINI | |
Extra lg. zucchini Ground sausage Bacon Cheddar cheese Spices (your choice) Glass or ceramic dish Take 1/2 to 3/4 pound of ground sausage and brown in a skillet. Cook 1/2 pound bacon. (The actual amount of meat depends upon the size of the zucchini. This amount is for an extra large zucchini.) Preheat oven to 325 degrees. Take zucchini, cut off ends and cut in half, lengthwise. Scoop out the inside leaving about 1/2 inch of a zucchini "shell." Talk about 2/3 of the zucchini guts and chop into small pieces and put into mixing bowl. When sausage is browned, mix in with zucchini guts. Break bacon into small pieces and add to bowl. Mix in spices of your choice. (I prefer Mrs. Dash, original blend). Scoop mix into zucchini shell. Place into a dish and fill dish with water until water is about 1/2 inch below top of zucchini shell. Place into oven and bake for approximately 1 hour, or until zucchini can be poked easily with a fork. The water should boil a little. Grate enough Cheddar cheese to sprinkle on top. Keep in oven until cheese melts. Gently lift out of water, cut and serve. Serves 1-2 or 3-4 depending on size of zucchini. |
