MONTE CRISTO SANDWICH 
1 lg. beaten egg
1/4 c. skim milk
1 tsp. grated Parmesan cheese
Dash pepper
1 oz. boiled ham
1 oz. sliced Swiss cheese
2 sliced white bread
1 tsp. butter

In shallow bowl combine egg and milk, Parmesan cheese, pepper and set aside. Place ham, then Swiss cheese on 1 slice of bread and top with remaining piece of bread. Dip sandwich into egg mixture, turning several times until as much liquid is absorbed as possible. In small nonstick pan, heat butter until bubbly and hot, add sandwich, pouring remaining egg mixture over all. Cook on low heat, turning only once, until brown and crisp on both sides. Makes 1 serving.
