CHOCOLATE MINT BROWNIES | |
FIRST LAYER: 2 squares unsweetened chocolate 1/2 c. butter (no substitute) 2 eggs, beaten 1 c. sugar 1/2 c. sifted flour 1 c. finely chopped pecans Melt and blend chocolate and butter over low heat. Beat eggs and sugar together. Stir in flour, chocolate and nuts. Line 8" square pan with heavy foil extending over edges. Pour in batter and bake at 350 degrees for 20 minutes. Cool completely. SECOND LAYER: 1 1/2 c. powdered sugar 3 tbsp. soft butter 1 1/2 tbsp. cream 1 tsp. Peppermint flavoring Several drops of green food coloring Blend all ingredients until smooth. Spread evenly on the first layer. Chill. THIRD LAYER: 1 square unsweetened chocolate 1 square semi sweet chocolate 1 1/2 tbsp. butter Melt and blend over low heat. Spread evenly over second layer. Cool completely. Lift from pan by edges of foil. Cut to desired size. |
