BEET AND CABBAGE SAUTE 
2 tbsp. butter
1 lg. onion, sliced
1 lb. cabbage, shredded (about 4 c.)
4 med. size beets, peeled and shredded
1/2 c. water
2 tbsp. cider vinegar, or to taste
2 tsp. sugar
1 tsp. salt

Melt butter in large heavy saucepan or skillet over medium heat. Add onion and cook until tender. Stir in remaining ingredients. Cover and cook over medium high heat 5-8 minutes until cabbage is crisp-tender, stirring once or twice. Makes 4 servings.
