SWEET & SOUR PORK CASSEROLE | |
1 lb. lean pork, cubed 1 onion, diced 1 sm. green pepper, diced 1 sm. red pepper, diced 1 sm. can pineapple 1 tbsp. soy sauce 2 tbsp. malt vinegar 1 tbsp. cornstarch 2 tbsp. brown or raw sugar 2 tsp. Worcestershire sauce 2 tbsp. ketchup 1 tbsp. sweet chutney 1/2 tsp. salt Cook pork a few minutes in open skillet, tossing continuously. Remove to casserole. Cook onion in a little butter for 3 minutes. Strain pineapple juice and make up to 1/2 pint with water. Chop pineapple into bite sized pieces and add it with liquid to saucepan with onions. Add peppers. Stir in sugar, soy and Worcestershire sauces, ketchup and chutney. Blend together vinegar and cornstarch and salt. Add to saucepan and cook 1 minute. Add thickened mixture to pork and cook approximately 1 1/2 hours at 300 degrees. Serve with boiled rice. |
