ZUCCHINI BREAD 
3 eggs, beaten
1 c. cooking oil
2 c. sugar
2 c. zucchini, grated
2 tsp. vanilla
1/2 c. nuts, chopped
3 c. all-purpose flour
1 tsp. baking soda
1/2 tsp. baking powder
1 tsp. salt
1 tsp. cinnamon

Beat eggs. Add oil, sugar, zucchini and vanilla. Cream. Add flour, salt, baking soda, baking powder, cinnamon and nuts. Bake at 325°F for 1 hour in two greased and floured loaf pans.

Makes 2 loaves.
