ZUCCHINI CASSEROLE 
1 1/2 oz. bread crumbs
3 oz. shredded cheese
1 lg. green pepper, cut into slices
1 lg. onion sliced and taken apart into rings
1 tbsp. butter melted in frying pan
3 c. sliced zucchini
3 med. fresh tomatoes cut into chunks

Saute all vegetables in melted butter until crisp done. Layer with zucchini. Starting with a layer of zucchini, sauteed vegetables, bread crumbs, and cheese, ending top player with bread crumbs and cheese.

Bake at 350 degrees for 1/2 to 3/4 hour. When vegetables are being sauteed, season with salt, pepper and garlic salt.
