RUTH LEE'S EBLESKIVER 
3 eggs, separate

Beat egg white stiff.

Beat yolks stiff and add:

2 tbsp. sugar
1/4 tsp. salt

Sift:

2 c. flour
1 tsp. baking powder
1 tsp. baking soda

Add dry ingredients to yolks alternating with 2 cups flour (carefully). Fold in egg whites.

Use ebleskiver heavy iron pan (cast iron), roll to turn and cook both sides.
