OVEN BAKED CHEESE POTATO CAKE 
3 lb. raw potatoes, grated
1 lg. onion, chopped
6 slices bacon
Bacon drippings
3 eggs
2 tbsp. flour
1 tsp. salt
Pepper to taste
2 c. shredded cheese

Fry bacon until crisp. Crumble and add to potatoes and onion. Add 3 tablespoons drippings. Beat eggs and stir into above. Add flour, salt, and pepper. Put in shallow baking pan. Top with cheese. Bake at 325 degrees for 1 hour and 15 minutes.
