LEMON CHICKEN 
1 pkg. boneless chicken breasts, frozen
6 eggs
Flour
1 stick butter
Lemon juice

Thaw frozen chicken until ALMOST thawed. Slice breast thinly (about 4-5 slices per half). Heat large fry pan over medium high heat. Add a little oil. Dredge chicken in flour, then dip into slightly beaten eggs. Immediately place in frying pan. Saute just until done and remove from pan. Add 1 stick butter, and lemon juice, to desired tartness.

When butter is melted, add chicken to pan, turn, and remove from pan. Serve with rice.
