BAKED APPLE PANCAKES 
3 med. tart apples, peeled, cored and cut into 1/4-inch wedges
4 eggs, beaten
1/4 tsp. salt
1 c. milk
1 c. flour
1/2 c. sugar
1 tbsp. cinnamon
1 tbsp. butter

With wire whisk or rotary beater beat eggs, milk, salt and flour until smooth. Let batter rest while you combine sugar and cinnamon and sprinkle over apples; toss to mix.

Butter generously 2 (9 inch) pie plates using 2 tablespoons of butter for each plate. Divide apples between each plate. Stir batter and pour over apples (about 1 cup for each plate).

Bake in preheated oven at 375 degrees for 30-40 minutes or until pancakes are golden brown, puffed and set. Serve hot with maple syrup or whipped cream.
