CHICKEN AND FRUIT SALAD 
2 1/2 c. diced cooked chicken (2 whole breasts)
1 c. sliced celery
2 tbsp. chopped green onions
2 tbsp. capers
1 tsp. salt
2 tbsp. lemon juice
1 can mandarin oranges
1/2 c. slivered toasted almonds
1/2 tsp. grated lemon peel

Cook chicken in water to cover with 1 teaspoon salt, several peppercorns, 1 small onion cut up; cook 20 to 30 minutes and then cool. Combine everything except the oranges and almonds, then chill. Just before serving, add almonds and orange.
