CRUST:

1 full section graham crackers, crush by using a rolling pin over crackers in a large Ziploc
1 tsp. cinnamon
3 tbsp. melted butter

Mix above ingredients in a 10-inch springform pan. Press down firmly.

FILLING:

3 lg. cream cheese
4 eggs
1 c. sugar

Use a cuisinart or mixer to combine the ingredients. Beat until creamy. Pour over crust and bake for 30 minutes at 350 degrees. Let cool about 10 minutes. Mixture will be soft in the middle and firmer on the edges.

TOPPING:

1 pt. cream
3 tbsp. sugar
1 1/2 tsp. vanilla

Mix ingredients in a small bowl. Pour gently and evenly over bottom layer in springform pan. Bake for 10 minutes, no longer! Chill overnight. Add sliced kiwi or strawberries on top, if desired.
