SQUASH SURPRISE 
2 lb. yellow squash
1 med. onion, minced
2 eggs, beaten well
1/2 c. melted butter
2 tbsp. dried parsley flakes
2 tbsp. sugar
1/2 c. grated Cheddar cheese
2 strips bacon, cooked & chopped
1/2 tsp. salt
1/2 tsp. pepper
1 c. herb seasoned stuffing mix

Cook squash in salted boiling water until tender, drain and mash. Add other ingredients except stuffing mix. Put in greased casserole. Top with stuffing mix. Bake at 350 degrees for 45 minutes.
