SQUASH CASSEROLE 
1 1/2-2 lb. yellow squash
1 sm. onion
Salt & pepper
1 tbsp. butter
1 tbsp. bacon drippings
2 eggs, well beaten
1 c. grated American cheese
4 strips bacon, fried crisp & crumbled
Dry bread crumbs or crackers

Cook squash with onion until tender; mash. Add all ingredients except crumbs to squash. Place in baking dish. Top with crumbs and bake 30 minutes at 350 degrees.
