SPICY CAULIFLOWER WITH TOMATOES
AND PEAS
 
1 sm. head (about 2 c.) cauliflower, broken into flowerettes
1 tbsp. water
1 med. tomato, seed & diced
1 c. tiny frozen peas, thawed
1 1/2 tbsp. butter
1/2 tsp. ground coriander
1/4 tsp. cayenne pepper
1/4 tsp. turmeric
Salt, to taste
1/3 c. fresh cilantro, chopped (optional)

Put the cauliflower and water in a shallow 10 inch round microwave- safe dish. Cover tightly and microwave on high (100% power) until tender, about 4 minutes. Carefully remove cover and add tomato, peas, butter and spices. Toss gently. Microwave uncovered on high, 1 minute. Makes 4 servings.

Since microwave ovens vary in power, you may need to adjust your cooking time.
