SPICED CHICKEN CURRY 
1 lb. chicken thigh pieces
2 lg. onions, chopped
1 tomato, chopped
2 tsp. garlic powder
1 sm. piece fresh ginger
1 tsp. turmeric powder
3 tbsp. oil for frying
4 tbsp. yogurt, plain (Dannon low fat)
Salt to taste
Chili powder to taste

Wash and peel the ginger. Crush into a ground paste. Wash the chicken and pat dry.

Mix yogurt, turmeric powder, garlic powder, ginger paste, salt, and chicken. Set aside to marinate for 1 hour. Cut onion and tomato into small pieces.

Heat oil in large frying pan; add onions and tomatoes. Fry for about 3 minutes. Then add the chicken mixture and cook for 20 minutes. Do not add any water. Add chili to taste and cook for another 10 minutes, until chicken is soft and tender. Add a little water if necessary.

Remove from fire, pour into dish and decorate with additional sliced onion, tomatoes and carrots. This recipe will serve 4-6 people.
