BARBECUED TURKEY LOAF 
2 c. Stove Top chicken-flavor stuffing mix
1 c. frozen mixed vegetables, thawed
1/2 c. water
1 tbsp. melted butter
1 lb. ground turkey or 1 lb. ground beef
2 eggs
1/2 c. barbecue sauce
2 slices processed American cheese in halves

Combine 1 cup stuffing mix, vegetables, water, and butter. Let stand 5 minutes. Combine remaining stuffing mix, turkey, eggs, and 1/4 cup of the barbecue sauce; mix well.

Put 1/3 of the meat mixture into baking dish and shape into an 8 x 4-inch rectangle. Cover with half of the cheese. Put vegetable mixture in center, spreading out. Put remaining cheese on top and cover with remaining meat mixture, pressing together into loaf shape.

Brush with remaining barbecue sauce. Bake at 350 degrees for 45 minutes. It can also be baked in the microwave. Cook on High for 5 minutes, rotate half turn and cook 5 minutes more. Let stand 5 minutes.

Since microwave ovens vary in power, you may need to adjust your cooking time.
