OLD FASHION PINEAPPLE UPSIDE DOWN CAKE | |
1 stick butter 1 c. brown sugar Melt butter in cast iron pan, add brown sugar. Large pineapple rings with cherries in center. Sprinkle with walnuts, if desired. In a large bowl: 3 eggs 1 c. sugar 1 c. flour 1 tsp. baking powder 5 tbsp. pineapple juice Separate eggs, beat whites stiff. Combine yolks, sugar, flour and baking powder and juice in bowl. Mix well. Fold in egg whites. Pour over above, bake at 350 degrees for 1 hour. |
