VO VO PORTUGUESE MALASADAS 
1/2 c. warm water
2 pkgs. active dry yeast
1/2 c. lukewarm milk
3-4 c. sugar
1/2 c. butter
2 eggs, beaten
1 tsp. salt
4 to 5 c. flour
Cooking oil

1. Measure warm water into mixing bowl and add dry yeast, stirring to dissolve.

2. Into this stir all other ingredients and 3 1/2 cups flour and mix with spoon until smooth.

3. Gradually add remaining flour to handle easily.

4. Mix with hands. Turn out onto lightly floured board, knead until smooth and elastic for 5 minutes.

5. Round up in greased bowl with greased side up. Cover loosely with saran wrap on top of dough (not rim of bowl) then several towels or blankets on top of bowl and place near warm area. (Saran is so the dough won't rise and stick to the towels.) Let rise until dough doubles.

6. Heat oil to 375 degrees. Break piece of dough to size desired by stretching it out. (Dip fingers in a cup of oil off to the sides so dough won't stick to fingers.)

7. Drop in hot oil. Fry until golden. Remove and drain on brown paper bags. Allow to cool enough to dip in deep dish of granulated sugar or put sugar in bag and shake sugar on.

Best when eaten fresh but good later (even the next day) in microwave on High for 30 seconds.

Since microwave ovens vary in power, you may need to adjust your cooking time.
